Preface This volume includes contributions to the Autumn Demonstration Meeting of the Society for Applied Bacteriology, held on 27 October 1971 at the Unilever Research Laboratory, Isleworth, London. It is Number 7 in the Technical Series and it marks the continuation of the Society's policy of providing experts in a field with the opportunity of demonstrating methods and techniques to Members and guests of the Society. As in previous years, the demonstrators have described their methods in this book v^rhich is intended primarily as a ready reference source at the laboratory bench. Although the demonstrators came only from laboratories in the United Kingdom, we feel that the methods and techniques which they describe in this volume will prove useful to their colleagues the world over. We wish to thank them for the great effort which they took in the preparation of the demonstrations and their chapters in this book. Our thanks go also to Mr. R.
