Introduction
In this book you will find a large selection of recipes, both sweet and savoury, to serve at your main meals. They have been planned to be not only appetising to eat and attractive in appearance, but also to take only a reasonable amount of time in preparation. Many of them are rather unusual recipes, which you may not have tried before, and will, I hope, provide a complete change from your more familiar menus.
A well planned meal should provide a good balance of dishes, and leave you feeling satisfied but not overfed. That is why I have included a good selection of hors-d'oeuvre and soups. As this book follows the normal course of a meal you will next find chapters on fish, meat, poultry and vegetables. You will notice, however, that the recipes have been arranged according to the various METHODS of cooking - roasting, grilling, frying, and so on, and there are special chapters on pressure cooking, casseroles and
stews. The same type of divisions occur in the chapters on hot and cold desserts. I used this particular system because I thought it would be a help in enabling you to find the KIND of dish you want in the shortest possible time. There are a couple of other general points I would like to mention. To those of you who may be relatively new to home-making and cooking, may I suggest that you plan your meals so that some of the cooking can be done earlier in the day. For example if you are planning to serve the kind of meat or fish which MUST be cooked at the last moment, choose a cold sweet which you can prepare beforehand. It is also sensible to make the fullest possible use of your cooker. For instance, if the main dish is to be baked in the oven, then choose a baked sweet which can be cooked at the same time, thus saving both time and fuel.
