Foreword
Improving your health through diet can be daunting unless you have some help with creating appetizing menus. We all know what we shouldn't eat, but what do we do with those healthy ingredients like brown rice, vegetables and pulses? Few cookery books dwell on them for long, and those that do usually combine them with flour, butter or margarine, cheese, eggs and other dairy products. That's not much help for someone who is serious about trying to discover whether they have any food allergies.
Barbara Cousins is a working nutritional therapist, and her book has arisen out of the need to help many people find ways to really enjoy food cooked without all those ingredients we so often take for granted. I have not come across any other book which contains so many recipes using vegetables in appetizing ways. Now that the World Health Organization is advising all of us to eat at least five portions of fruit and vegetables every day, good recipes are vitally important, and you are sure to find some in Cooking Without that you will treasure and use over and over again.
