. ntroductionIn 1988, at the age of 53, I discovered a way of beating the Candida overgrowth which had been the cause of a lifetime of ill health. Within a few months 1 had started a course of training to become a qualified Nutrition Consultant. By 1991, it was clear that with the combination of my experience and my training, I was able to help an enormous number of people who were suffering as 1 had, and to help them even further 1 wrote the Beat Candida Cookbook. It took months of hard work to put it together and type it on an ancient, huge word processor. When it was finished, we photocopied 50 sets and put acetate covers on them with a borrowed comb-binding machine.The first 50 sets disappeared before we knew it so we photocopied another hundred, and they continued to go as fast as we could prepare them. It became so time-consuming that we paid someone else to do the copying, but before long it was too much for one person so we decided to have it professionally printed - keeping the same format since it was evidently so popular - and to set up our own publishing company Other nutritionists and some stores began to stock it for their clients and customers, and we soon had to ask our printer for two more reprints. We had no distribution network apart from the obviously powerful word-of-mouth which led to sales of over 11,000 copies.I was approached by a Norwegian publishing company Ex Libris, for my permission to produce a Norwegian translation of the book, which 1 gladly gave. Now 1 have been approached by Thorsons to produce an updated English edition. This is an offer 1 am delighted to accept, because first of all 1 know that the book needs to contain some of the additional knowledge 1 have acquired in the eight years since I first wrote it.
