','Vi" " "í' ',7 /'' ' I'-/ !Iíi I'i ' I, i'liV-'"^' I'IV'íiFOREWORD BY KEN HOMCardiovascular ailments, such as heart disease and strokes, are the main cause of death in the UK and according to figures from the British Heart Foundation they account for more than 235,000 victims every yean One reason for such a high rate is that our diets are high in saturated fat but comparatively low in fresh fruit and vegetables.Traditionally, the Chinese diet is low in fat and high in fruit and vegetables, so the fact that its popularity among the UK population has grow/n enormously over the past 50 years should be beneficial. According to a study published by the Institute of Grocery Distribution in 2002, Chinese food (including takeaways, ready meals and restaurant meals) was the most popular ethnic cuisine in the UK and was preferred by 58 per cent of consumers. However, bad Chinese takeaway food is greasy and unhealthy and is also high in salt and monosodium glutamate (MSG), factors that may increase our risk of cardiovascular problems.Recognizing the need to encourage the adoption of a healthier diet the British Heart Foundation in collaboration with the Chinese National Healthy Living Centre in London, set up the Chinese Takeaway Project. The aim of the project was to improve the nutritional knowledgeof takeaway cooks while reinforcing the values of traditional healthy Chinese practices through free training sessions across the country. Training was conducted by Wynnie Chan, a Cantonese-speaking nutritionist who emphasized the importance of better cooking methods, such as limiting the use of fat and salt, eliminating MSG and food colourings and encouraging the use of more fruit and vegetables and leaner cuts of meat. The development of healthier versions of popular Chinese takeaway dishes, such as sweet and sour pork, chicken chow mein, aromatic crispy duck and beef in black bean sauce, meant that these and other healthier options became available in many takeaway shops. In addition, by using better cooking practices and healthier ingredients, takeaway food was brought closer to its true source. Here is a book that contains simple-to-follow recipes with details of the nutritional content of each recipe, such as the amount of fat calories and sodium. This means that yOu can plan and choose dishes that fit in with your lifestyle, whether you are someone who wants to lose weight a busy mother who needs to feed her family quick, healthy meals or someone who just loves eating Chinese food. What could be better?FOREWORD
