IntroductionThe recipes of New England are some of the oldest andmost traditional in the country. Food played anenormous part in the founding of the United States,which began in this part of the country with the landingof the Pilgrims. During their first year they saw theircrops, planted from seed brought with them fromhome, fail to take hold in the new soil and climate. Theyhad to adapt to su rvive, and that meant rely i ng on nativefoods, however strange these seemed. The Indiansintroduced the Pilgrims to maize, pumpkins, squash,cranberries and their own domesticated turkeys. ThePilgrims were soon using these North Americaningredients in many of their favorite recipes from home.These foods that saved the settlers' lives also becamepart of the Thanksgiving menu that is still enjoyed today.Fish and seafood were important resources from thestart and have remained so. But New England hascontributed many other good things to Americancooking - maple syrup, blueberries for pies, clamsforchowder, to name just afew. As immigrantsfrom othercountries came to join that first band of settlers, theybroughttheir own influences to bearonacuisinethatretains its traditional connections while being at thesame time truly American.
