ForewordI only met my younger cousin Erica, the author of this beautiful book, a few times when I was a child, and then not again until she visited us as an adult. What a transformation had occurred; she had blossomed into a svelte beauty! But her story was not all happy. As a teenager, she broke her back and, due to compound injuries received in a second accident, she lived in a state of chronic pain. The pain drove her to do all she could to make her body more comfortable, including regular exercise and a diet that restricted white sugar, white flour, and dairy. She worked as a personal trainer because the constant movement kept her from stiffening up. The level to which she pushed herself while working out put me to shame. I was inspired! If Erica could push past the pain to exercise with such integrity, then surely I could, too!Erica stayed with us for three months in California and ate 100% raw vegan; she was amazed that her pain continued to lessen the longer she stayed raw. So Erica returned to Sweden on a mission to bring raw foods to this small northern country! Soon she was catering fashion shows with raw food and doing TV, magazine, and newspaper interviews. I was impressed and excited for her! But when I saw this book, I was excited for everybody; now we have a book that will inspire the world to eat a raw food diet, also called a living food dieta diet that will bring life to you, and will bring you to life!I lost 45 lbs. on the raw food diet just like the one outlined so simply and elegantly in this book. The diet took away a tumor, acne, Candida, and depressionand that's just in me. In working as a raw vegan educator, writing about the raw diet, and receiving hundreds of emails a week from raw vegans, I have heard thousands of stories of people experiencing similar relief from so many of our society's discomforts, great and small. But it was my experiences giving birth that convinced me to go 100% raw once and for all! I have had five children, all at home, with my husband as mid-wife. For my first child, I had been eating cooked foods throughout the pregnancy, and the labor was 30 hoursand painful. For my second, I stuck to raw food, and the labor was 2 hours, and almost completely pain free. My third, I was back to cooked food, and it was 40 hoursand painful. That was enough. I wanted another delivery like the short, painless one! From then on, I stuck to raw food and my last two labors were very quick, and relatively pain free.I so enjoy the photos of the mouthwatering nutrient-dense foods, guilt-free pleasures, and healing recipes in this un-cook book! There is nothing more beautiful than the gorgeous plants this good Earth has offered us to eat while we are her guests. And Erica, a fashion model by trade, is living proof that the raw vegan diet does a body great!
