IntroductionThere is nothing like the feeling of bringing your harvest of w/ild game to the family table, especially when you have enjoyed the pleasures of the hunt together. For forty years now we have been hunting and cooking together. This mutual bond has strengthened our relationship immeasurably. In an age when many families rarely ate a meal together, our daughters learned the custom of sitting down as a family at least once a day and interacting over a meal that often included some form of wild game and fine wine.Although Chuck's family had a long hunting tradition, Blanche had never been exposed to the sport. In the first fall of her new married life, Chuck announced to her that he intended to spend every weekend hunting. He invited her to join him, but warned her that if she refused, she would have no right to grumble that he wasn't home on weekends. Intrigued by the idea that some sport could be so fascinating, Blanche agreed to tag along. It didn't take long for her to discover the excitement of the hunt, and the fun of sharing it with her best friend.Since that first season, we have enjoyed hunts all over this country and Canada; from elk in British Columbia to quail in North Carolina. The memories continue to pile on each other: the quiet of a squirrel hunt in the woods of Ohio and Pennsylvania; the rustic elegance of a quail hunt using mule-drawn quail wagons on a cotton plantation in Tennessee; the pent-up excitement of watching a huge fiock of Mallards work the blind on a sandbar in the Missouri River in South Dakota; the splendor of a horse-pack trip for trophy elk during bugling season in British Columbia; and especially the feeling of being on top of the world as you watch your German wirehair pointers lock up on point in the wide open prairies of Montana.Through all these hunts, our philosophy has stayed constant: Do not take game unless you intend to use it. This has led us on a continuing search for new recipes to use with each season's harvest. This book is the compilation of the successful end products of that search. We have also included favorite recipes that some of our hunting friends have shared with us. We hope you enjoy reading the book and trying the recipes.
