Add the sugár and continue beating until light and fluffy.2.Sift the flour with the salt and add to the egg mixture.3.Mix the butter with the warm milk until melted and add to the flour-egg mixture with the vanilla essence. Mix gently but thoroughly.A. Divide the cake mixture into three equal portions. Mix the red food coloring into one. Mix the cocoa with the warm milk and add to the second portion. Leave the third portion plain.5.Butter and flour three 8-inch (20-cm) cake tins and pour in the three portions. Baké in a 350°F (180°C) oven for about 25 minutes. Cool slightly, then turn out.6.Mix the egg whites and the confectioner's sugár in the top of a double boiler. Put over hot water and beat until firm. Remove from heat and continue to beat until stiff.7.Cream the butter until very soft. Fold into the egg white mixture.8.Spread between cake layers.9.Mix together the cream cheese, milk and vanilla until soft and smooth.10. Slowly add the sifted confectioner's sugár and mix until thoroughly blended.
